Resep masakan rumahan ayam rica-rica tahu putih – Rica rica sebenarnya merupakan makanan khas Manado, Sulawesi Utara. Rica artinya cabai/pedas dalam bahasa Manado. Resep ini cocok dipadupadankan dengan daging ayam, bebek, sapi maupun ikan.

Berbagai bahan makanan yang diolah dengan bumbu rica-rica akan menggugah selera terutama untuk para pencinta rasa pedas. Sekali merasakan gigitannya, bakal bikin ketagihan.

Komposisi bumbu untuk membuat rica-rica cukup beragam. Dimulai dari potongan cabe, bawang merah, bawang putih, jahe, kunyit dan lain-lain.

Masakan ini menggunakan cukup banyak bumbu dapur namun anda tidak perlu khawatir sebab bumbu-bumbu tersebut mudah ditemukan. Anda tidak perlu jauh-jauh ke Manado untuk mencicipi rasanya karena kini anda bisa membuatnya sendiri di rumah.

Pilihan daging yang digunakan dalam resep ini adalah ayam. Anda bisa menggunakan ayam kampung atau broiler sesuai preferensi. Ayam kampung rasanya lebih gurih dan tentunya lebih sehat.

Saya menggunakan daging ayam bagian dada dan tulangnya. Selain daging ayam, anda bisa menggunakan daging bebek atau sapi. Jika menggunakan daging bebek, pilihlan bebek muda agar dagingnya tidak keras.

Untuk tahu, saya menggunakan tahu putih besar yang tekturnya lebih padat. Jika anda menggunakan tahu putih biasa, anda bisa menggorengnya terlebih dahulu sampai berwarna kuning keemasan namun tidak perlu terlalu garing. Anda juga bisa menggunakan tahu kuning yang biasa digoreng.

Bumbu yang digunakan dalam resep ini cukup beragam, namun mengolah daging ayam menjadi rica-rica cukup mudah dilakukan. Berikut bahan-bahan dan cara memasaknya.

Bahan yang dibutuhkan untuk Ayam Rica-rica Tahu Putih

  1. 300 gram ayam potong/kampung (bagian apa saja), cuci bersih
  2. 1 batang daun bawang
  3. 1 pcs serai, potong ujungnya dan belah menjadi 4 lalu geprek
  4. 5 pcs cabe merah
  5. 2 pcs cabe rawit (jika anda ingin lebih pedas, bisa ditambah)
  6. 5 pcs bawang merah
  7. 3 pcs bawang putih
  8. 2 butir kemiri
  9. 2 cm jahe
  10. 2 cm lengkuas
  11. 1 sdt kunyit bubuk
  12. 2 lembar daun jeruk, sobek agar aroma keluar
  13. Minyak goreng, secukupnya untuk menumis
  14. Air 1 liter
  15. Kecap (optional)
  16. 1 blok tahu putih, potong dadu
  17. 1 buah jeruk nipis
  18. 1 sdt garam
  19. 1/2 sdt kaldu jamur
  20. 1/4 sdt merica bubuk

Cara membuat Resep Masakan Rumahan, Ayam Rica-rica Tahu Putih

  1. Siapkan panci sedang, isi dengan air secukupnya.
  2. Setelah ayam dicuci bersih, tuang air perasan jeruk nipis ke daging ayam. Diamkan selama 10 menit.
  3. Rebus daging ayam hingga matang kira-kira 20 menit.
  4. Tiriskan ayam dari kuahnya. Jika anda menggunakan daging ayam kampung, kuah rebusan dapat digunakan kembali untuk kuah rica-rica. Namun jika menggunakan ayam petelur, kuah rebusan tidak digunakan karena terlalu berminyak.
  5. Sembari menunggu ayam matang, potong daun bawang.
  6. Bagi bawang merah dan bawang putih menjadi 2. Haluskan dengan food processor/chopper/ulekan.
  7. Tambahkan cabe merah dan cabe rawit, haluskan.
  8. Tambahkan kemiri lalu garam. Pisahkan bumbu yang sudah dihaluskan.
  9. Geprek jahe, lengkuas dan serai.
  10. Siapkan wajan, nyalakan kompor dan tuang minyak untuk menumis bumbu.
  11. Tumis bumbu yang sudah dihaluskan hingga harum.
  12. Masukkan jahe, lengkuas, serai dan daun jeruk.
  13. Tambahkan air/kaldu hasil rebusan ayam secukupnya. Masukkan merica, kaldu bubuk dan kunyit bubuk.
  14. Masukkan kaldu bubuk dan sedikit kecap. Tes rasa. Jika sudah pas, masukkan tahu yang sudah dipotong-potong.
  15. Masukkan daun bawang.
  16. Masak kembali sampai kuah berkurang tinggal setengah dari awal dimasak, kira-kira 10 menit.

Bahan Yang Dibutuhkan Untuk Membuat Resep Kue Kering Nastar Lembut Anti Gagal

Resep Adonan Nastar

  1. 400 gram tepung terigu protein sedang, contoh: segitiga biru
  2. 100 gram tepung maizena
  3. 1 bungkus kecil susu bubuk (merek apa saja, saya pakai Dancow-netto 27 g)
  4. 350 gram margarin
  5. 50 gram gula halus
  6. 1/4 sdt garam
  7. 2 kuning telur
  8. 50 gram keju parut (optional)

Resep Selai Nanas

  1. 3 buah nanas ukuran sedang (jenis apa aja, saran: yang rasa asam)
  2. 2 helai daun pandan
  3. 1/4 sdt kayu manis bubuk
  4. 3 buah cengkeh
  5. 250 gram gula pasir
  6. 1/2 sdt garam
  7. 1 sdm margarin
  8. 100 ml air

Bahan Olesan Nastar

  1. 1 butir kuning telur
  2. 2 sdm susu cair/bubuk dicairkan

Cara Memasak Resep Kue Kering, Nastar Lembut Anti Gagal 

Selai Nanas

  1. Potong nanas, pisahkan bonggolnya, potong kecil-kecil. Karena saya gak ada food processor, saya pakai blender. Masukkan buah nanas ke blender, tambahkan air 100 ml. Blender hingga halus.
  2. Tuang ke dalam panci, tambahkan pandan, bubuk kayu manis dan cengkeh.
  3. Jika kadar air mulai berkurang, masukkan gula dan garam. Aduk hingga mengering dan airnya surut kira-kira 20 menit.
  4. Setelah air surut, kecilkan api, masukkan margarin dan aduk rata. Anda tidak perlu khawatir selai nanas yang masih panas akan sedikit lembek namun jika sudah dingin akan lebih kering.
  5. Matikan kompor, biarkan selai nanas suhu ruang/masukkan freezer selama 10 menit.

Adonan Nastar

  1. Sembari memasak selai nanas, anda bisa membuat adonan nastar. Masukkan margarin, gula halus (sebelumnya sudah diayak menggunakan saringan) dan garam. Aduk menggunakan whisk hingga tercampur rata.
  2. Masukkan kuning telur dan keju (optional), aduk rata.
  3. Masukkan tepung terigu dan maizena yang sudah diayak. Campur rata.
  4. Tambahkan susu bubuk, aduk hingga rata. Pada tahap ini saya menggunakan tangan untuk mengaduk hingga membentuk adonan kira-kira 5 menit.
  5. Adonan akan terasa lembut tetapi masih bisa dibentuk, jika anda ingin bentuk dan ukuran nastar seragam gunakan scoop atau timbangan kue.
  6. Ambil selai nanas, bentuk bulat-bulat sesuai selera dan letakkan di piring.
  7. Ambil adonan nastar, pipihkan, tambahkan isian selai nanas dan bulatkan.
  8. Tata di loyang yang sudah diolesi dengan margarin.
  9. Panaskan oven di suhu 145° C selama 5 menit.
  10. Masukkan ke oven, panggang selama 15 menit.
  11. Siapkan kuning telur dan susu, aduk rata. Ini akan digunakan sebagai olesan nastar.
  12. Keluarkan nastar, oles nastar satu per satu bahan-bahan yang sudah disiapkan.
  13. Panggang lagi selama 15 menit sdi suhu yang sama.
  14. Keluarkan dari oven, nastar siap dinikmati.

Tips menyimpan resep kue kering nastar:

  1. Tunggu nastar hingga dingin, alasi dengan kertas roti dan tata di toples atau wadah yang tertutup rapat.
  2. Masukkan silica gel khusus makanan. Pengalaman saya bisa awet lebih dari 1 minggu.

Resep kue bolu cake labu kuning panggang – Labu kuning, jujur saya belum lama mengenal dan menggunakan buah ini di beberapa olahan masakan. Namun semenjak memutuskan untuk hidup sehat, buah ini menjadi salah satu pilihan (selain alpukat tentunya) untuk memuaskan perut yang keroncongan.

Bahan yang dibutuhkan untuk membuat Cake Labu Kuning Panggang Ekonomis

  1. 4 butir telur
  2. 160 gram brown sugar/gula pasir biasa
  3. 1 sdt SP
  4. 1/2 sdt garam dapur
  5. 200 gram tepung terigu
  6. 1/2 sdt baking powder
  7. 1/4 sdt vanili bubuk/vanilla extract
  8. 220 gram labu kuning
  9. 150 gram margarin/mentega

Bahan topping:

  1. Irisan kacang almond, secukupnya sesuai selera
  2. Keju parut, secukupnya
  3. Kismis, secukupnya
  4. Selai strawberry, secukupnya

Cara membuat Resep Kue Bolu Cake Labu Kuning Panggang Ekonomis

Persiapan Bahan

  1. Belah labu kuning menjadi 2 bagian, sisihkan isinya dan kupas. Buang serat paling atas pada daging buah labu. Potong labu kotak-kotak dan kukus. Anda bisa menggunakan kukusan biasa, oven atau magic com.
  2. Kukus labu dengan api sedang selama 20 menit. Diamkan hingga dingin.
  3. Lelehkan margarin/mentega, biarkan dingin.
  4. Siapkan bahan- bahan kering: tepung terigu, baking powder dan vanili bubuk. Campur hingga rata.
  5. Pecahkan 4 telur, tempatkan di dalam mangkuk besar, disarankan mangkuk stainless.
  6. Jika sudah dingin, haluskan labu dengan food processor/blender. Disarankan tidak hanya menggunakan garpu/tangan karena hasilnya kurang halus.

Pembuatan cake labu kuning

  1. Ambil mangkuk berisi telur yang sudah dipecahkan, tambahkan brown sugar, SP dan garam.
  2. Kocok dengan mixer mula-mula kecepatan rendah, sedang kemudian tinggi. Kocok sampai kental berjejak kira-kira 15 menit, tergantung pada jenis mixer dan kecepatannya. Adonan dianggap sudah kental berjejak jika saat mixer diangkat, adonan sudah mengembang, berwarna putih, kental dan dapat membentuk pita.
  3. Masukkan labu yang sudah dihaluskan, campur menggunakan mixer dengan kecepatan rendah.
  4. Tambahkan bahan kering, masukkan dalam tiga bagian. Kocok menggunakan mixer dengan kecepatan rendah agar bahan kering tercampur rata.
  5. Tambahkan margarin/butter leleh, campur dengan menggunakan spatula dengan sistem aduk balik.
  6. Panaskan oven dengan suhu 175°C selama 5 menit.
  7. Siapkan 2 loyang ukuran 18 cm, alasi dengan kertas roti/minyak, oles bagian samping loyang dengan margarin.
  8. Tuang adonan ke kedua loyang, adonan setinggi 4 cm.
  9. Untuk loyang pertama, taburi keju, kismis dan irisan kacang almond. Loyang kedua tidak diberi topping karena akan menjadi base cake.
  10. Panggang di suhu 175°C selama 25 menit.
  11. Keluarkan dari loyang, letakkan di cooling rack. Lepaskan kertas roti/minyak dari cake.
  12. Olesi cake dari loyang kedua dengan selai strawberry.
  13. Susun/tumpuk dengan cake dr loyang pertama. Cake siap dihidangkan.

Cara menyimpan Resep Kue Bolu Cake Labu Kuning Panggang Ekonomis

  1. Jika cake sudah dingin, potong menjadi beberapa bagian (Sesuai selera) dan simpan di wadah tertutup.
  2. Letakkan di tempat kering. Kadang saya memanaskan di oven selama 10 menit pada suhu 150 C jika ingin dalam keadaan hangat.

Burger is the most classic dish which consisting of bun, meat and veggies such as lettuce and tomatoes. Originally, burger may considered as American food but now as food for a million people in the world. Do you know that every second Mc Donald sells 75 pieces burger? Or 2.36 million pieces burger in a year? What a surprise! Shall we try to cook burger at home? Healthier and tastier burger that eaten as sandwich for our family.

You can find many variation burger with customary dressing and any kinds of vegetables. Burgers can make for dinner or lunch, i prefer to make for lunch because on the afternoon we need many calories to bring enough energy. I eat dinner but just a light meal, consist of small portion of food or food that is easy to digest such as fruits, oatmeal or bread. I will reviewed 10 minutes Gordon recipe burger. These burgers is tender, juicy, delicious and easy to make.

What i’ll need to make Burger

Gordon use beef, i prefer to use skinless salmon fillets. Salmon is one of the best source of omega-3, protein and B vitamin. The most important thing from consume salmon is healthy and it will help you to lose weight. Certainly followed by healthy diet and workout. For the vegetables, i choose lettuce, tomato and cucumber. I simply added mashed avocado on a burger in place of mayonnaise or other condiments higher in saturated fat. Avocado is my favorite fruit. These fruit is satisfying addition to any meals. It is rich, creamy and contain many benefit substance that can enhance nutrients on our body.

For fish, i added panade to keep the flavor and juiciness. Without panade, fish/meat that needs to be cooked well will tasted dry and inedible. Panade is a mixture of starch and liquid that is added to meat/fish. Any combination of starch (bread, panko or crackers) and liquids (milk, buttermilk, yogurt, stock or water) can be made panade. I used regular white bread without crust and milk. I mashed bread and milk into a paste with fork. The paste will coats the protein and prevent moisture to squeezing out.

I eliminate sriracha sauce because i dont want the burger become too spicy. I replaced spicy flavour with chili sauce. Related to  seasoning, i added garlic powder for extra flavour. Lime zest is one ingredients i added to relieve fishy from salmon. I also added scrambled egg between meat and upper bun as replacement of bacon.

I use a little bit mayonnaise for the sauce, assemble among bun and lettuce. I also make a burger with onion and butter (for making patties). Furthermore, i didn’t use cheese.

How to make Burger

Basically, i use Gordon recipe for making a burger. There are several different method: First, i’m make panade for patties. One portion burger need 1/4 cup panade. Tear white bread into small pieces and pour milk. Use fork to mash bread and milk into a paste. Add the paste into mixture of fish and season well. Make your patty less than an inch and press it down slightly on grill pan (if you don’t have many time to cook). When forming the patties, use hand or spoon to handle the meat as little as possible. Too much press and mix will turn them into rough patties even use panade.

Second, i added lime zest, chili powder and garlic powder to a fish mixture. Third, i’m making a scrambled egg with butter. I also added a pinch of salt and pepper. Forth, I cooked the egg without oil, it’s a helathier option. If you have bacon strips, you can use it.

For the sauce, i use chili sauce and a little bit mayonnaise. Just put among the bun and lettuce, without mixing. I assemble the burger: bun, mayo and chili sauce, lettuce, tomato, cucumber, onions, patty, scrambled egg, mashed avocado and topped by bun. Above i have mentioned the difference method of cooking, other than that i apply similar method with Gordon.

How to keep and store Burger

  1. Ground meat/fish should be stored in the refrigerator, use zipper lock plastic bags for extra protection.
  2. Keep meat/fish which processed into patties in a freezer so they stay together and juicy. Put the patties in a covered tray/plate.
  3. If any excess of burger bun, put them on freezer.
  4. You need to cut lettuce, wash and clean. After that, you have to boil for 1-2 minutes and then immediately place in ice cold water to stop the cooking process. Place on plastic bag or container.
  5. You can keep tomato and cucumber in refrigerator but place on shelf near refrigerator door. It have warmer temperature than others.

How to choose ripe avocado for burger

Gently press the avocado, if the surface of skin is tender you know it’s ripe and ready to eat. Ripe avocado may have a darker color. Don’t choose the soggy avocado, it can be over ripe avocado. Store in the refrigerator if you plan to eat next day, separate with vegetables to prevent over ripe avocado.

Bagian ini memuat cara jitu untuk mencapai kebebasan finansial dimulai dengan langkah kecil yang dilakukan secara progresif dan kontinu. Lower economic growth may lead to higher unemployment, larger social spending and larger fiscal deficit. Based on world bank data, Indonesia inflation rate show 2,0% on 2020. During the lockdown phase, the pandemic can affect supply and demand of certain product. Other factor is dependence on employment in the production process. Panic buying and hoarding ensue (mask, oxygen and medical items) also become an issue related to inflation rate.

An Overview of Sectoral impact

A major impact differs greatly from sector to sector in a country around the world. Tourism become the hardest sectors which sufferering from pandemic. Hotelts, restaurants, tour operators, cruise and airlines company have suspended their operations as an impact from major losses of commuting. Manufacturing, agriculture, transport and education are also struggling with these condition. Food retail is particularly affected because many shops, market or department store have been closed as a result of pandemic. Other than that consumption of certain goods has decline.

Food industry receive a particularly high burden because they have to concern about food availability and food safety. Construction sector also sensitive to economic cycles because it depends on economic activity resulting from the pandemic. The incline of covid-19 cases give huge duty to health workers, the backbone of health system. The pandemic really demolish our lives in a blink of eye.

The Impact on Food Security

Since the beginning of pandemic, food supply and food demand seems didn’t change significantly. Panic buying may change supply chain and temporarily affect on price of the commodities. Ensuring food supply chains will be crucial in securing food supply and preventing food crisis in a countries. Suggestion to stay at home may prevent farmers for working and reaching market to sell their products. In some region in Indonesia, traditional markets are close for several days to sanitize and prevent virus transmission.

Pandemic also give huge impact on labour intensive crop production because labour shortages and temporary production discontinuation. Plantation and industrial workers in export oriented industry also got an negative impact. Some factory have to cut the annual target production and decide to day off some employee to obey government rule. On demand side, economic uncertainty has been high during pandemic which indicates that people are limiting on household spending. Now people are prioritizing on basic needs rather than secondary product such as manufacturing product.

When pandemic is starting to spread, meat processing sector continuing get pressures both from demand and supply side. Significant decline in the demand side of meat and processed meat. This has resulted in an over supply and lower price of livestock. Some chicken farm willing to sell their product in a low price because no demand and high production cost.

The Impact on Health Sector

In history, a deadly virus has attact the entire global economy and bring many changes in some aspect. This pandemic reminded all of us of the vital role of health workers protect, relieve suffering and save lives. Covid-19 has exposed health workers and infected their families. Infection among health workers are far greater than general population. In addition related to psychological risks, health workers have to work for long hours, living in fear because recently contact with patient, separated with family. It make extraordinary psychological stress.

Improve mental health and well being, protect from any violence in workplace, secure health workers with injected vaccine and ensure a functioning health system become some support to facing the pandemic.

Which Sector that ‘safe’ to optimized?

There is two sector should be optimized during pandemic in Indonesia. First, agricultural sector which give big portion to Gross Domestic Product (GDP). Data from Central Bureau of Statistic in Indonesia, agricultural sector contribute 13,53% to GDP (in 2017) and continue to grow 1,15% in 2018. Agricultural product which has exported also become major factor of increased agricultural sector contribution. On the other hand, agricultural sector provide basic needs and it has stable price and stable demand. Every inhabitant want agricultural product as primary need. From the agriculture sector, indonesia could take advantage to transform economy. Moreover, agricultural workers work in outdoor area so the workers can keep distance from another. This is safe from virus transmission. Government should be promoting the agriculture sector.

Second, distribution system related to transportation system. Global production and supply chain disruption also happen during pandemic. Business owner and any industry has to keep assesing the impact of pandemic on operation, production, distribution and supply chain. They have to balance supply, manufacturing and logistic of the product. Moreover, technology had a good impact on distributing product.

Gordon Ramsay Gnocchi, Aren’t It Impressive?

Gordon Ramsay Gnocchi Recipe, a Home Made Goodness – Gnocchi are an Italian pasta made from potato and other ingredients such as vegetables and cheese. This is the first time i write a review about making gnocchi. I’m not Italian but i am constantly making delicate gnocchi as breakfast or dinner menu. There are tons of variation to make gnocchi. Broccoli, cauliflower, ham, bacon and shrimp become the star of the dish. You can choose one of them, add some fresh veggies to get healthier food. Gnocchi can make with sauce become a hearthy soup, baked or cooked with dressing.

Classic potato gnocchi are made from cooked mashed potatoes, flour, egg and add some ricotta cheese. Ricotta cheese is cheese technically be made from milk of cows, sheep, goats or water buffalo. Those cheese is light and moist, a fastastic ingredient to add on pasta, soup, pizza or lasagna. I like to recook Gordon Ramsay recipe for making home made gnocchi. Its simple, easy and i don’t need to rush just to get to finish meal for my family. Unlike pasta, there’s no resting period and rolling involved.

Here’s that ingredients I used

For best result, i use starchy potato like a russet (commonly called Idaho). In Indonesia, russet seems to be quite difficult to find. You can replace with red or purple potato (potato with red/purple skin) or any potato that you can find when go to market. Yukon Gold able to produce perfect gnocchi. Great potato should be tender, light and starchy texture. Russet will do, but Yukon Gold have more nutty flavour.

I use several ingredients which Gordon Ramsay gnocchi didn’t use. For vegetables i continually choosing asparagus, baby spinach and frozen peas and carrot. You can pick the fresh one, but you have to boil them before added in gnocchi. Gordon use ricotta cheese, i can’t find in market/supermarket so i use parmesan and mozzarella cheese. Ricotta cheese will affect how sticky, wet or dry your dough will be, depending on the amont of flour you use. I prefer to make light gnocchi. Dried thyme i added on dough to give a little bit sweet and peppery flavor. Gordon also use thyme but the fresh one. I use the dried one, if you use fresh thyme just keep in mind that 1 teaspoon dry equals 1 tablespoon fresh.

Ordinary all purpose flour can use to make gnocchi. All purpose flour contain high protein results in chewy gnocchi. If you want to be truly Italian dish, use imported Italian flour market Tenero. Two things that important to make gnocchi related to flour are: add just enough flour to hold the dough together and don’t kneading too much. The less flour you use, the fluffier your final gnocchi.

Recipes from Gordon Ramsay use egg but i didn’t. Egg helps ingredients bind together into a dough but using an egg give extra moisture and will makes a dough requiring more flour. If you use so much flour that the dough will be denser. The final dough have to be soft, smooth and a little sticky.

How to make a delicate like Gordon Ramsay Gnocchi

First of all i will baking potatoes to produce lightest gnocchi. Don’t boiling potatoes because they will absorb too much water and the dough will be soggy. Related to cooking instruction, i have done exactly same with Gordon. I had sautee asparagus in frying pan with a little olive oil. Set aside, and then add the gnocchi to the hot pan, seasoning with salt and pepper and cook for both side. Add the frozen peas and carrot with butter and dried thyme. Pour the asparagus and spread the butter on it.

I use my hands for mixing to fell the dough stickiness. Give flour to your hand before kneading. Using a pastry knife to cut the dough into pieces. Don’t leave your gnocchi when boiled into the pot. Cooking gnocchi only takes two or three minutes. When the gnocchi start to float, drain them as soon as possible. Cook gnocchi in medium heat to keep gnocchi from damage.

Best Sauce for Gordon Ramsay Gnocchi Lookalike

A simple sauce from this recipe is my favorite. But sometimes i need little variation. Simple sauce from tomato and fresh basil is my second option. Sautee crushed tomato and add chopped garlic season with salt, pepper and suggar. Make a puree and cook again in the frying pan.

Make, Serve or Freeze them for a later

You can serve freshly gnocchi right away or you can keep and store in fridge for later use. Cooking frozen gnocchi need two step. After cool down, you can cook in a pot with water start to boiled. Second, pour into boiled water. Don’t forget to add enough water. Frozen gnocchi cause the temperature of the cooking water to drop, so they’ll fall apart before the water returns to a boil if there are too many in the pot.

Tom Yum, a Special Asian Cuisine Menu – Are you a big fan of sour and spicy soup? I think Tom Yum is perfect choice. Tom Yum is a kind of soup originally come from Thailand. If you have visited Thailand, you have to tried those signature Thai soup made from any kind of seafood. This dish is cooked in every Thai kitchen and restaurants with families give those recipe to children, grand children and through generations. Tom Yum is favorite menu for my husband. Tom yum consist of 2 words ‘tom’ which means boil and ‘yum’ meaning spicy salad. For the first time i cooked Tom Yum, i have just realized the dish have a lot of spices and ingredient. But worth it to cook in your home!

You might didn’t know about two variations of Tom Yum. The first variations is tom yum with shrimp in a clear broth and second one is the creamy milky version. Creamy Tom Yum made from canned evaporated milk or coconut milk. I prefer to cook the first one, but someday i’m going to try the other one. I went to supermarket before making this recipe to buy some ingredients such as: shrimp, fish meatball, mushroom, chikuwa (japanese product made from seasoned ground fish/meat), tofu, sausages and the veggies (cauliflower, carrot, etc). You can really use any kind of shrimp.

Tom yum need a lot of preparation time. You have to clean shrimp and veggies, then cut all the veggies and the other ingredients. When it come to buying shrimp, choose the whole shrimp and take the head part to make stock. The broth of the soup is made from combination of fresh herbs and stock from shrimp. The perfect Tom Yum should be a rich of orange colour comes from the fatty juice in the head of shrimp. Even better, this delicious soup is an excelent medicine for flu and sinuses.

Ingredients for Tom Yum, An Asian Cuisine Menu

  1. 250 gram any kind of shrimp, peel off and divided the head part to make stock
  2. 100 gram straw mushroom, sliced
  3. 7 pcs fish meatball, cut into 2 pieces
  4. 10 pcs Chikuwa
  5. 3 pcs crab stick, cut into long pieces
  6. 2 pcs sausages, thinly sliced
  7. 2 pcs carrot, sliced
  8. 150 gram cauliflower, cut
  9. 3 tablespoon fish sauce
  10. 1 stalk leek, thily sliced
  11. 1/2 pcs lemon, cut and squeezed
  12. 5 pcs lime leaves, torn to release the flavor
  13. 1/4 tomato
  14. 3 pcs shallot, peel off
  15. 3 pcs garlic, peel off
  16. 5 pcs chili, sliced
  17. 3 pcs galangal (2 cm each), peel off, wash and smash it
  18. 3 tablespon olive oil
  19. Salt, as you needed
  20. Pepper, as you needed
  21. 2 stalks lemongrass, cut into 4 piece to release the flavor.

 

How to Cook Tom Yum, a Special Asian Cuisine Menu

  1. Pour shallot, garlic and chili on the food processor until smooth. I add the candlenut to make savory Tom Yum. Mash the candlenut and mix with garlic, shallot and chili. Sautee for 5 minutes.
  2. Add olive oil to the skillet, add a pinch of salt. Sautee the shrimp heads and skin in the oil, cooking until red and crispy.
  3. Pour water in a pot, add the shrimp heads and skin. Turn heat to medium-high. Boil until the broth looks orange and buble appeared on the surface (15 minutes).
  4. Divided the broth and the head & skin of the shrimp.
  5. Pour the clear broth in a another pot. Simmering for 5 minutes and then add the lime leaves.
  6. Add lemongrass and galangal.
  7. Add shallot and corriander roots (optional).
  8. Pour chili
  9. Continue cooking broth for 10 minutes or until you can smell the flavor.
  10. Refine and divided broth and the spice.
  11. In a deep cooking-pot, pour the stock and turn heat to medium high.
  12. Add shrimp and mushroom. Continue cooking until the shrimp are pink and plump.
  13. Add carrot and cauliflower. Cook for 10 minutes until perfectly cooked.
  14. Add crabstick, fish meatball, chikuwa and sausages.
  15. Add leek.
  16. Give seasoning with salt and pepper.
  17. Add lime and corriander leaves.
  18. To give a salty taste, add fish sauce.
  19. Turn down the heat to low, taste test and adjust as needed.
  20. Add lime juice and tomato.
  21. Serve in bowls with fried onions. Enjoy.

 

Tips and Variation When You’re Cooking Tom Yum

  • If you want orange color in stock, head and skin of the shrimp have to sautee with olive oil.
  • Add chili to make Tom Yum more spicy.
  • To make creamy soup, add coconut milk.
  • Serve with fresh cilantro to added kick of flavour. Bon apetite!

INDONESIAN Economy at a Glance

China commonly called the world second largest economy. This name seems appropriate even in unstable condition such as corona virus outbreak. Data from the National Bureau of Statistics showed China Gross Domestic Product (GDP) growth was faster than economist prediction at 6,1% and followed 4,9% growth in third quarter. GDP grew 2,3% in 2020, this data has make China become the only one major economy in the world has recovered since last year. Chinese GDP growth accelerated because the recovery in services, high value of export and strong industrial output. Many nations in the world has been struggling to contain covid-19 pandemic. Instead, some country confirmed new variant of corona virus. In the beginning of 2021, global corona virus broke 95 million while death rate has reached 2 million. Government in many country got pressure to quickly distribute vaccines while at the same time economic still suffering from pandemic.

China economic growth mostly contributedby industrial sector, the main component is human resources as competitive advantage. China has succesfully created inovation in technology, transportation, communication device and many more. Annual basis in 2020, economic growth in China is projected at 2,1% (year on year). China will become the first country which have positive economic growth in 2020.Economic recovery in China supported by strict rule and policies to handle virus outbreak and special funds for business sector.

Different with China, US economy shrank in 2020 but economist has been giving prediction to recover on the forth quarter. Economics project that growth will seen this year once the virus outbreak still remains a threat for global economy. How about Indonesia?

At the beginning of the year, IMF estimated economic growth will grow approximately 4,8 percent. Primarily economic growth predicted 6,1 percent but economist has been revised the target. Indonesia’s goverment fell optimistic on 5 percent for economic growth. Positive outlook in 2021 supported by rebound that occured in the second quartal in 2020. GDP is expected to grow 4,8 percent in 2021 and 6 percent in 2020. Those prediction will happen if strong policies including distribution of covid-19 vaccine implemented. Recovery macro poliicies and fiscal strategy should be applied to increase  revenue to financing the impact from corona virus outbreak. Government need to embrace an economic change and create policies that allow capital, labor, skills and innovation to make stronger economic environment. In indonesia, both direct and indirect investment collapsed in 2020 and remains bleak for years to come. Government have challenge to stabilize availability of credit (some country have supported fund to some company) and maintain economic policies to prevent financial crisis. It’s not an easy duty.

GORDON RAMSAY Avocado Toast With a Twist, a Food Review

Come back to my favorite dish for breakfast, avocado toast! This menu is  an effortless breakfast and full of healthy. Avocado is my favorite fruit (apple also included) because when i eat avocado i fell full until lunch time and push back my appetite. Sometimes avocado called super food because it owns a lot of nutrients and antioxidants such as folic acid, omega 3, magnesium, potassium, lutein and fiber.

Avocado rich in vitamins A, C, D, E, K and B complex. Beside the flesh that rich in nutrients, avocado seed also contributes to our healthy body because rich in soluble fiber, healthy greases and prevent digestive disease. Healthy greases in flesh and seed actually reduce risk of heart disease and stroke. I have added avocado on breakfast since on diet program to lose weight. Avocado can be eaten in multiple ways and it can be added to other food such as bread (avocado become replacement of butter on top of bread). Use avocado to add variety to your meal menu everyday. You can use any kind of avocado, most commonly found around the world is Hass variety.

I watched a video on youtube from Gordon Ramsay. He is my favorite chef who inspire me to cooking and keep trying a new recipe. The title of those video is “Gordon Ramsay’s avocado on toast with a twist”. You can type and find on youtube. On those video he make avocado toast with sour dough bread. I prefer to use whole grain bread/gluten free baguette. If you not on diet you can use reguler white bread with or without crust.

He just make avocado toast, sometimes you can playing a game with sunny side up,  scrambled egg or various toppings. Gordon grilled the bread on a grill, i choose to toast with oven at 130° C for 10 minutes. If you have toaster, use it. Before you toast, dont forget to preheat the oven for 3-5 minutes. Oven will make the bread more crispy and golden brown (when you grill the bread, a black line will appear as a sign of burnt bread). Olive oil isn’t added on bread to prevent bread to be too oily. Meanwhile the bread has been processing, i was prepare the avocado. Cut the avocado with sharp knife, take the seed, cut into quarters and take the flesh. I like to mash the avocado beside just slicing and put on the top of the bread. I mash avocado with the back of fork and place in a bowl.  After that, i give seasoning with ingredient same like in those video (sea salt, pepper, lemon juice). Gordon make separated mixture (shredded lemon skin and the seasoning) and put on the top of avocado. I didn’t do this process because i dont like look too full in my plate.

Sometimes, i give a pinch of cinnamon as source of antioxidants. Gordon ramsay add flax seed and chili pepper, i dont have flax seed so i replace with chia seed. This seed is rich in fiber, antioxidant and protein but low in calories. Perfect choice for people on diet! I am preparing a plate, arrange the bread had toasted and give mashed avocado on the top of it. I add chia seed and drizzle with olive oil. Scramble egg also put on the plate.

Breakfast with egg recipes variation – Pumpkin is my favorite ingredients for breakfast or dinner beside granola and oatmeal. On the first time, i steamed and ate pumpkin without any toppings or side dish. It is not delicious, plain and decrease my appetite.

The second time, i cooked delicious cake with pumpkin as base ingredients. It’s tasty, escalate appetite but i need more time to baked and unhealthy (high in calories, sweet, not gluten free). Moreover, a pumpkin cake is more suitable as desert than breakfast menu. So, i am going to make healthy pumpkin pancakes.

This recipe is the perfect healthy recipe to start your day. Packed with fiber, they are also free from allergen ingredients. This cuisine inspired by original recipe of pancake but i give a little touch of creativity!

Why did i choose pumpkin as main ingredient? I commonly stated pumpkin as super food. Beyond its good taste, pumpkin is nutritious and linked to many benefit for our health.

Pumpkin is rich in vitamin and minerals. It contains beta-carotene that will change become vitamin A. Pumpkin also high in antioxidant. This substance may prevent from oxidative stress which has been linked to several chronic disease (such as: cancer).

Furthermore, pumpkin contains vitamin C which has been produced immunity system for our body. Anyone who will want to lose weight, simply put pumpkin in your plate as daily food. Dont worry with calories calculation! A cup (245 grams) of pumpkin only contain 50 calories.

You can consume more of it and still take in fewer calories. Pumpkin is originally as a fruit (contain seeds). The seeds of pumpkin also beneficial. They are a great source of protein, fats including omega 3 and 6 fatty acids.

These pancakes recipe need a little preparation time. Made with rolled oat or grinded instant oats instead of all purpose flour, which is blended with pumpkin puree, egg, milk and other ingredients.

Easy to make, super healthy, delicious and only need a little time so you will not rush in the morning. I like to add 2 tablespoon of honey as a topping. You can add maple syrup, cheese or chocolate. These recipe can easily made for vegan by eliminating dairy product, and egg. You will love these pumpkin pancakes!

Ingredients you will need to make Healthy Pumpkin Pancakes, Breakfast with Egg Recipes

  1. 1 cups (150 grams) instant oats, grind
  2. 1 eggs, beaten
  3. 250 ml milk
  4. 1 cup (150 grams) pumpkin puree
  5. 3/4 tablespoon backing powder
  6. 1/4 tablespoon salt
  7. 2 tablespoon brown sugar
  8. 1/2 teaspoon ground cinnamon
  9. 2 tablespoon vegetable oil
  10. A pinch of vanilla extract

Instruction to cook Healthy Pumpkin Pancakes, Breakfast with Egg Recipes

  1. First, steam the pumpkin into steamer for 10 minutes. You can also roast the pumpkin. Cook until the flesh is soft and coming away from the skin.
  2. Take the softened flesh into food processor/blender, blend until smooth. Pumpkin puree is ready to blend with other ingredients. Leave it on the processor/blender.
  3. Mix egg and brown sugar in separated dish. Stir perfectly with balon whisk.
  4. Add milk, mix together.
  5. Add grinded oat, mix together.
  6. Pour a mixture of egg, sugar, milk and oat to a food processor/blender.
  7. Add backing powder, salt, vegetable oil, ground cinnamon and vanilla extract. Blend together with pumpkin puree.
  8. If you dont want to mix with blender/food processor, use balloon whisk to blend.
  9. Heat a pan over medium low heat.
  10. Drop a ladle of pancake batter. Cook for 2-3 minutes, until the top of the batter starts to bubble. Gently flip to other side and continue cooking for 1-2 minutes.
  11. Set aside on a plate.
  12. Continue cooking all the batter until finish.
  13. Serve the pancakes with yogurt and maple syrup/honey. I will add some strawberry or banana on the top of the pancake. Ready to eat.

Tips and FAQs

  1. This recipe will make 10 medium sized pancakes, then the serving size will be 4 pancakes. When i fell hungry, i eat 5 pancakes so this recipe only for 2 portion breakfast with egg recipes.
  2. You can use rolled oats, just oats or mix with all purpose flour. Add 1/4 cup if you will use flour.
  3. I dont like to use a lot of spices but if you like other spices such as nutmeg and ground ginger, please add it.
  4. If you have any seeds (such as: pumpkin seed, flax seeds, chia seeds etc), please add.
  5. Wrap and save in fridge up to 1 days.

Breakfast recipes sausage – I am Indonesian and on diet program so i changed meal from rice to potatoes. But sometimes i feel bored with boiled potatoes so i try to make mashed potatoes with sausages.

Others people called bangers and mash, Gordon ramsay make bangers and mash become simple recipe and sure to please all the family. I’m pretty sure you’re going to love this recipe.

Simple and easy to make

This is the most easiest and quickest breakfast with sausage recipe i have ever cooked. Sausages and mashed potato is familiar ingredient and become favorite dish in UK. The ingredient are easy to find, cheap and mainly consisting of mashed boiled potatoes, sausages (pork/beef/chicken or others) and sauce.

This recipe inspired by Gordon Ramsay with several adjustment. I choose to adapt gravy sauce with onion and chicken broth. I always cook this recipe as a menu for my entire family. Now there are many different flavors in sausages available from original to cheesy and spicy. You can select your favorite taste.

While sausages and mashed potato make you feel full, i continually serving the gravy sauce with green peas, carrots or a fresh salad to balance the nutrition. I love veggies and try to make every meal that i eat should be healthy as well.

I have frozen vegetables in fridge and need to be  boiled to make ready to eat. I prefer to choose baby potatoes or Yukon Gold rather than regular potatoes. Their skin contains many vitamins and minerals. Baby potatoes are round shape and can range from the size of walnut to the size of ping pong ball.

Their skin is very thin and tender. I don’t need to peel potatoes before cooking and quick to boiled or roasted. I always sliced in half or quarter. I clean and scrub potatoes carefully before put them into the pot. I can get perfect skin-on mashed potatoes with baby potatoes.

Modifying my own recipe from breakfast recipes sausage

Gordon ramsay use pork sausages for his recipe, but i like to use original beef sausages because in Indonesia hard to find good and tasty pork sausages. I prefer to use the big one and give one or two scratch to make the garlic flavor more absorbed on sausages.

Meanwhile, i choose to boiling potatoes two times. First time to cook potatoes until perfectly soft and moist. Second, i return the potatoes in sauce pan after the potatoes have been drained. Shake it off and cook again for 2 minutes. This step is imporant to release water and moisture from the potatoes.

Before potatoes boiled into the sauce pan, i add some garIic powder and pepper to season the potatoes. Gordon don’t do it, he seasoned the potatoes after smash it. I will seasoned again after smash it with fresh chives and salt (2 times seasoning). If you don’t have chives, you can replace with parsley.

Fresh milk (hot) and butter also pour into the pan before smash the potatoes. It will make moist and creamy texture. Alternately, you can use plain based milk (vegan option). I also put grated cheese (not much just a little). I will doing those step in the pan over medium heat. I remove olive oil.
