Satay is meat dish that marinated, twisted, grilled and served with rice wrapped in leaves (commonly caled: lontong). That dish are popular dish from Indonesia, serve with peanut sauce and accompanied with chili sauce. This asian recipe chicken are well known not only in asia but also in the world. You can meet satay as signature dish when you traveling around the world by plane.
Malaysia, Thailand, Philippines and Brunei also admit satay as international dish, where it has adapted style and taste of the people live in that country. On this recipe, i will make lilit satay from Bali, indonesia. The word ‘lilit’ roughly means wrap around. This cuisine is become the most interesting food for tourist and anyone who will visiting Bali. Twisted satay actually use pork or fish as main ingredients. I will subtitute with boneless chicken and add curry paste. Spicy, sweet and savory are appeared as specific taste of the food.
Normally, satay wrapped around bamboo skewers but you can replace with lemongrass stalks or stainless steel (use for goat meat). On this occasion, i will utilize bamboo skewers. Lilit satay served with side dish such as: rice and tuna. There is special chili sauce called sambal matah which accompanied the cuisine. Happy cooking, good luck!

Ingredients for Lilit Satay – Asian Recipes for Chicken
- 300 g boneless chicken, grind
- 100 g coconut, shredded and fried without oil
- 1 tablespoon curry paste
- 1 teaspoon chicken broth powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 20 pcs bamboo skewer
- 4 pcs chili
- 4 pcs cayenne
- 4 pcs onion
- 3 pcs garlic
- 2 cm ginger
- 2 cm turmeric
- 3 tablespoon olive oil/cooking oil
- 2 stalk lemongrass
- 8 pcs chili
- 3 lime leaves
- 8 onion
- 3 cloves garlic
- 3 tablespoon cooking oil
- 1/2 teaspoon salt
- 1/4 teaspoon sugar
- 2 tablespoon lime juice
Instructions for Lilit Satay, Asian Recipes for Chicken
- Grind the spices or place all the ground spices in a food processor.
- Preheat cooking oil in a wok, add the ground spices for 2 minutes.
- Pour curry paste and saute until fragrant around 5 minutes. Leave in separate dish.
- Mix ground spices, chicken, shredded coconut, chicken broth, salt and pepper.
- Divided into 20 parts.
- Wash your hands. Scoop 2-3 tablepoon the meat mixture, mold and press to make a solid texture. Repeat until done.
- Preheat the grill. Grease satay with oil and soy sauce (if you like). Grill until cooked perfecly.
Instruction to make Sambal Matah, Asian Recipes for Chicken
- Chop lemongrass and garlic.
- Preheat cooking oil in a wok, pour and stir to mix until golden brown around 5 minutes. Leave it on separated dish.
- Cut the lime leaves into small part, remove the middle part of the leaves.
- Cut the onion and chili.
- Mix them all together, give seasoning. Stir well.
- Add the lime juice, mix.
- Ready to serve. You can store in refrigerator for one week maximum.
- Soak the bamboo skewers in water for few minutes. It will prevent the skewers burning when grilled.
- If you use lemongrass stalks as skewer, cut the stalks into 2 parts and remove outer layer.
